Sweet, savory, salmon

Even though I call myself a vegetarian, I do (currently) eat fish. One of my favorite fish to eat is salmon. It’s healthy, delicious and easy to make. My mom introduced me to this recipe when she made it for Christmas dinner and ever since, I’m obsessed. It’s incredibly easy, you probably already have most of the ingredients and even if you’re not the biggest fish person, you will probably love it.

I’ve now made it twice. Once for my sister in law, brother and his girlfriend. And now a second time for my friend Jessica (of Rainbow Sprinkles). She was nice enough to take pictures of the process too!

This recipe is a modified version of the one from All Recipes.

I start by putting 3 tbsp honey and 3 tbsp dijon mustard into a bowl. Melt about 2 tbsp of butter and then add it to the honey/dijon mixture. Then in another bowl I put panko bread crumbs and chopped (crushed) pecans. Take the salmon fillets and coat with the honey mixture then coat with the pecan/panko mixture. Place in a glass dish and bake 15-20 mins at 400. It may take longer depending on your oven. Check the inside of the salmon to make sure it’s the right color. A good way to tell if it’s done – if it’s very light pink or if there is some white stuff bubbling out of the cut you made when you first checked it.

This is now my go to recipe when it comes to making something in a pinch. I hope you enjoy it too!
